Greek Salad

Please note that the image does not show the feta cheese. I had a pregnant friend over for lunch, so decided Id serve the soft cheese separately.



Preparation Time: 15 minutes
Cooking Time: Nil. minutes
Makes: 8-10 servings

Ingredients
350g baby mixed leaf salad leaves
250g cherry tomatoes, halved
2 Lebanese cucumbers, halved lengthways, chopped
1 red onion, coarsely chopped
1 red capsicum, deseeded, quartered lengthways, chopped
1 cup kalamata olives, pips removed
200g Feta, cubed





Dressing
4 tablespoons olive oil
1 tablespoons freshly squeezed lemon juice
1 garlic cloves, minced
1 ½ tablespoon dried oregano

Method
  • Combine dressing ingredients in a bowl, and mix with a fork.
  • Season to taste with salt and pepper.
  • In a large bowl, bring together salad leaves, tomato, onion, cucumber, capsicum and olives.
  • Add in dressing, and toss to combine.
  • Top with feta, and enjoy.

  • Tip: To make a few hours ahead simply omit dressing until serving, and keep covered in fridge.
