Went to a Greek restaurant yesterday and had spanikopita (spinach and feta pie) it wasn't very nice but the salad was. I love it so much I was craving it today. I don't however like the olives or cucumber, so I've made a tasty Greek salad with avocados.

My Greek salad with a twist
Preparation Time: 5 minutes
Makes: 4 servings
Ingredients
For the salad
Soft marinated feta cheese about 320 g
1 packet of washed rocket
2 tomatoes
1 avocado diced
1 red onion thinly sliced
For the dressing
2 tablespoons of olive oil
1 tablespoon of white vinegar
1/2 teaspoon of minced garlic
1 teaspoon of dried or fresh oregano
Salt and pepper to taste

Salad dressing ready to go
Method
The salad I had yesterday was rocket and thinly sliced iceberg lettuce but I prefer just the rocket as the iceberg lettuce at the bottom had gone soft from the dressing.
Wash rocket and place in a bowl
Dice avocado and drain the cheese and break up into small pieces
Prepare the dressing by mixing together all dressing ingredients.
To serve the salad there are 2 ways
First is to add all ingredients to the rocket and mix through with the dressing to combine all flavours
Or for nice presentation layer salad start with a bowl of rocket and dress with about a teaspoon of dressing, place some tomatoes on top then some onion, then avocado and then finally break up cheese on top.
Pour over more dressing and you're done.
