Greek Style Meatballs

This has been a family favourite for years and works well with pasta, rice or mashed potatoes, plus a green vegetable or carrots.

Preparation Time: 30 minutes
Cooking Time: 45 minutes at 150°C or 30 minutes over direct heat at a gentle simmer
Makes: 6 meatballs

Ingredients
1 slice of bread (I use wholemeal, but the choice is up to you)
1 large egg
1 small (or half of a large) onion
1 large sprig of parsley (optional)
A scant teasp of salt
A few grinds of black pepper
2 teasp light soy sauce
500g minced beef
Seasoned flour
Oil for frying

For the sauce
1 medium onion, finely chopped
1 teasp salt
A few grinds of black pepper
1 level tbsp soft brown sugar or 1 tbsp honey
1 teasp Dijon mustard
1 teasp light soy sauce
2 teasp lemon juice
150g tomato purée, diluted with about 300ml water

Method
  • Put all the ingredients, with the exception of the minced meat, into a blender or food processor. I find the mini bowl of my Magimix is perfect for this amount, but you would need the larger bowl if you wanted to double up.



  • Blitz until you have a mushy mixture. Alternatively you could cover the bread in water to soak it, squeeze dry and then add to the other ingredients.



  • Using a fork mix the meat extender with the minced beef in a bowl until everything is well combined.





  • Wet your hands under a cold tap and shape the mixture into meatballs, flatten slightly and dip into the seasoned flour.



  • Heat the oil in a frying pan (I use my le Creuset shallow casserole, which is ideal for frying and gentle cooking with the lid on top) and add the meatballs. Cook over a medium/high heat until golden on both sides.



  • Drain on kitchen paper.



  • Add more oil to the pan, heat, and fry the chopped onion until golden.



  • Add the remaining ingredients and simmer for five minutes.





  • Add the meatballs to the casserole, baste with the sauce, cover the pan and continue to cook, either in the oven (for 45 minutes) or on the stove for about 30 minutes.



  • These are also good refrigerated and reheated.
