Green Bean Curry

When green beans are in season you can get a lot of them very cheaply. But eating beans can become boring if they aren't prepared in exciting new ways each time.

This healthy Indian curry is a wonderfully spicy way to use up green beans.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 2

Ingredients

1 1/2 cups of green beans, chopped into 1 cm pieces
1 tbsp oil
1/4 tsp salt
1/2 small tomato, diced
1/2 small onion, diced
3 cloves of garlic, minced
1/8 tsp of chili powder
1/4 tsp turmeric
1/2 tsp masala
1/4 tsp cumin seeds
1/3 cup of water

Method

  • Heat oil in a frying pan and add the cumin seeds. Allow them to fry until they begin to pop, then add the onion and fry till translucent



  • Add the powdered spices and fry for another minute before adding the garlic and tomato. Fry this until the mixture begins to separate.



  • Add the green beans and salt and stir well for a few minutes. Then add the water.



  • Cook on low to medium heat until the beans are soft and have darkened a few shades and all the water has been absorbed.



  • Serve as a main dish with rice or roti, or as a side dish served along with other Indian dishes.
