Green Bean Curry
When green beans are in season you can get a lot of them very cheaply. But eating beans can become boring if they aren't prepared in exciting new ways each time.
This healthy Indian curry is a wonderfully spicy way to use up green beans.
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 2
Ingredients
1 1/2 cups of green beans, chopped into 1 cm pieces
1 tbsp oil
1/4 tsp salt
1/2 small tomato, diced
1/2 small onion, diced
3 cloves of garlic, minced
1/8 tsp of chili powder
1/4 tsp turmeric
1/2 tsp masala
1/4 tsp cumin seeds
1/3 cup of water
Method
Heat oil in a frying pan and add the cumin seeds. Allow them to fry until they begin to pop, then add the onion and fry till translucent
Add the powdered spices and fry for another minute before adding the garlic and tomato. Fry this until the mixture begins to separate.
Add the green beans and salt and stir well for a few minutes. Then add the water.
Cook on low to medium heat until the beans are soft and have darkened a few shades and all the water has been absorbed.
Serve as a main dish with rice or roti, or as a side dish served along with other Indian dishes.
