Green Bean Salad
A perfect way to enjoy your greens.
Preparation Time: 10 minutes
Cooking Time: 5 minutes
Ingredients
375 grams green beans
1 medium tomato
1 small red onion
1/2 cup flat leaf parsley
60ml extra virgin olive oil
20ml red wine vinegar
Salt
Pepper
Method
Top the beans but leave the tails.
Blanch the beans in boiling water for 1-2 minutes until just tender.
Drain blanched beans and refresh under cold water, set aside.
In a small bowl whisk together the oil and vinegar, season with salt and pepper, this makes the dressing.
Slice the tomato in half, cut into four pieces and halve them again.
Cut the onion into rings and cut each ring on half.
Place beans, tomato and onion in a large bowl.
Add the leaves of the flat leaf parsley.
Pour dressing over the salad.
Serve
Note
Don't add the tomato or dressing until ready to serve as the salad will go soggy and lose its freshness.
