Green Bean Salad

A perfect way to enjoy your greens.

Preparation Time: 10 minutes
Cooking Time: 5 minutes



Ingredients
375 grams green beans
1 medium tomato
1 small red onion
1/2 cup flat leaf parsley
60ml extra virgin olive oil
20ml red wine vinegar
Salt
Pepper

Method
  • Top the beans but leave the tails.



  • Blanch the beans in boiling water for 1-2 minutes until just tender.



  • Drain blanched beans and refresh under cold water, set aside.
  • In a small bowl whisk together the oil and vinegar, season with salt and pepper, this makes the dressing.



  • Slice the tomato in half, cut into four pieces and halve them again.
  • Cut the onion into rings and cut each ring on half.



  • Place beans, tomato and onion in a large bowl.



  • Add the leaves of the flat leaf parsley.
  • Pour dressing over the salad.
  • Serve



  • Note
    Don't add the tomato or dressing until ready to serve as the salad will go soggy and lose its freshness.
