Green Bean Salad

The Green Bean is a vegetable that is found and used worldwide and yet rarely rates a mention or raises an eyebrow with consumers. They can be bought frozen, canned or fresh and can be steamed, boiled and stir-fried.

I will always buy fresh and tend to steam my beans for use as a side salad. This salad travels well as picnic food and is equally popular at BBQ's or in a formal dinner setting.

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 2 as a side dish

Ingredients
150g Green Beans
Salt
Pepper
Lemon Juice
Olive Oil

Method
  • Cut the ends of the green beans and remove the string or bean thread.

  • Bring water to the boil and add the beans inside a steamer.

  • Steam for approximately 8-10 minutes.

  • Beans should be cooked but still have a little crunch to them (be careful not to overcook them).

  • Remove from heat and run under cold running water.

  • Place the green beans on a serving plate.

  • Garnish with some sea salt and freshly ground black pepper.

  • Drizzle a little olive oil and lemon juice over the beans and serve warm or refrigerate until required.
