Green Bean Salad
The Green Bean is a vegetable that is found and used worldwide and yet rarely rates a mention or raises an eyebrow with consumers. They can be bought frozen, canned or fresh and can be steamed, boiled and stir-fried.
I will always buy fresh and tend to steam my beans for use as a side salad. This salad travels well as picnic food and is equally popular at BBQ's or in a formal dinner setting.

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 2 as a side dish
Ingredients
150g Green Beans
Salt
Pepper
Lemon Juice
Olive Oil
Method
Cut the ends of the green beans and remove the string or bean thread.
Bring water to the boil and add the beans inside a steamer.
Steam for approximately 8-10 minutes.
Beans should be cooked but still have a little crunch to them (be careful not to overcook them).
Remove from heat and run under cold running water.
Place the green beans on a serving plate.
Garnish with some sea salt and freshly ground black pepper.
Drizzle a little olive oil and lemon juice over the beans and serve warm or refrigerate until required.
