Green Chilli SeafoodMushroom Fry

The seafood mushroom has got different names like needle mushroom, lily mushroom and so on. This is one of the edible mushrooms frequently used in East-Asian cuisine.

The cultivated mushrooms are white in colour since it is not exposed to sunlight. The wild ones are usually coloured brown or dark brown.

Preparation Time: 25 minutes
Cooking Time: 5 minutes
Makes: 2 servings

Ingredients
150g seafood mushroom
1/4 tsp turmeric powder
1 tsp chilli powder
1 sprig of curry leaves
1-2 green chilli
2-3 shallots
Salt to taste
3 tsp oil

Method
  • Cut the stem end of the mushroom and wash it in cold water. Drain and add 1/4 tsp salt and 1/2 tsp turmeric powder into the mushroom. Let it sit for 5 minutes. Then wash them again in cold water.

  • This is done to make sure the mushroom is good and not poisonous. You can avoid this step if you are sure about the quality and type of mushroom.

  • Then add turmeric powder, chilli powder and salt into the washed mushroom. mix well to combine. Cover and let it sit for 15 minutes.

  • Peel, wash and slice the shallots, green chilli and curry leaves.

  • Heat oil in a pan. When the oil is hot, add the curry leaves and green chilli. Let it fry for a few seconds. Then saute the shallots until golden brown.

  • Add the marinated mushroom into the pan. Mix well and cook for 5-8 minutes on medium-low heat. Stir occasionally.

  • Enjoy the spicy mushroom fry hot with rice.
