Green Cream Soup

This is such a creamy and delicious soup without any added cream. It is simple but very tasty.

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 3 servings

Ingredients

500 g of frozen or fresh peas
One onion
Olive oil
Salt and pepper
Parmesan cheese
Thyme

Method
  • Heat a tablespoon of olive oil in a pan and then sweat the onion in it for 4-5 minutes.
  • Season the onion with salt, pepper and thyme, fresh or dried.

  • Add the peas, fresh or frozen, don't use peas from a can. You can add frozen peas directly to the pot, you don’t need to thaw them.

  • Add water or stock to cover the peas and bring to a boil. Reduce the heat and let simmer for 10 minutes, until the peas are cooked.
  • Blend the soup until you reach the desired consistency.
  • Serve the soup with parmesan shavings and pepper.
