Makes: 1 servings
Ingredients
2 eggs
2 spring onions
40g spinach leaves
20g feta cheese
½ lime
1 tsp coconut oil
Method
Chop the spring onions, tear the spinach, and crumble the feta, then fry it in coconut oil.
Beat the eggs with a fork and then stir into the mixture.
Squeeze over the lime juice and stir until the eggs are scrambled.
