Green Eggs NO Ham
The perfect medley or crisp, fresh green vegetables and vinegary chickpeas is enough to make any meat eater green with envy. This dish is suitable for any meal of the day and is filled with iron, protein, fibre and vitamin C.

Ingredients
1 small broccoli head
10 green beans
2 garlic cloves

Salt & Vinegar Chickpeas
1 tbsp pepitas
1 spring onion
1
poached egg
1 tbsp olive oil
seasoning
Method
Preheat the oven to 170C.
Chop the garlic, brocolli and beans into chunks and spread onto a lined oven tray. Scatter with your #sthash .XgSikdMa.qjtu">chickpeas , olive oil, salt and pepper. Bake for 20 minutes.
At the 15 minute mark give the veggies a stir and put your egg on to poach. Soft poached eggs take 4 minutes to cook. When the egg is done the green veggies will be too.
Tumble the roasted vegetables into a deep bowl, top with the poached egg and scatter with pepitas, a snipped spring onion and seasoning.
Enjoy your green eggs NO ham for breakfast, lunch or dinner.
