Green gram stir fry salad

If you make a list of comfort foods of Keralites, a South Indian state, the top one will be the steaming, piping hot rice porridge with green gram stir fry and pickle.

Green gram is rich in proteins and fills you up, satisfying the appetite. It also has a high fiber content. I cook it simply because it is very tasty and one of my family's favorite. This can be frozen and used whenever a guest pops in.

Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 4 servings

1 cup green gram
2 cups of water
Salt as required
1/2 of a medium size onion (chopped)
1 tsp crushed garlic
1 sprig of curry leaves
1 chilly
1/2 tsp turmeric powder
1/4 tsp chilli powder
3 tbsp coconut oil
1/4 tsp mustard seed

Wash the green gram 2 to 3 times. Put water in a pressure cooker and then add the washed green gram and salt.

Pressure cook for 20 minutes or until 3 whistles on medium heat. Switch off the heat and wait until the pressure drops.
Heat oil in a pan. Pop the mustard seeds. Add the crushed garlic and onion. Saute until onion is soft.
Now add chilli and curry leaves and stir well.

Add the turmeric powder and chilli powder. Stir and cook for 10 seconds.

Now add the cooked green gram into it. Mix well and cook for 2 to 3 minutes.

Remove from heat. Add some thinly sliced onion into it and mix well.

The nutritious salad is ready. Have a healthy meal.
