Green Leaf Smoothie
My 60-Day Challenge which incorporates daily exercise and most importantly a clean eating regime commenced today. In my quest to eat clean, I am eliminating cow's dairy, caffeine, alcohol, processed sugar, gluten and all processed food in general. It's extreme to say the least and will certainly be an interesting two months.
Although I have always thought myself as being a healthy eater, once I started scouring food labels, I was surprised at how much processed food my family consumes.
My biggest challenge I foresee will be omitting cow's dairy, caffeine and alcohol from my diet and in my recipes.
I can't think of anything more relaxing on a Friday afternoon, winding down my week with a few glasses of red, some cheese and crusty bread.
I hope you will share some of my journey and healthy recipes that will go towards fuelling my body and appetite.
This is packed with vitamins and minerals, fibre and minimal sugar (only the natural fructose found within the banana and blueberries).
It's a great breakfast staple providing the body with a kick-start to the day. I'm not a breakfast person and admit to drinking at least 3 cups of tea all before 0900, therefore this smoothie will be my caffeine substitute during the challenge.
I've never been a smoothie drinker but this Green Leaf recipe has made me rethink my attitude towards the Smoothie. Not only is it delicious tasting and creamy but best of all is super charged with healthiness.
My is a fantastic way to kickstart the day.
Preparation Time: 5 minutes
Cooking Time: Nil
1 Cup Coconut Water
1/4 Bunch Continental Parsley
1/2 Cup Baby Spinach
1/2 Cup Bok Choy
Small Knob of Ginger
4-5 Ice Cubes
Banana, Ginger and Blueberries add a little colour to the kaleidoscope of green.
Place all the ingredients into a blender and process until smooth.
This is a great way of ensuring you consume more green leaf vegetables in your day.
