Green Peas Pesto

Combine peas, ginger, garlic, curry leaves, black pepper, chilli,salt

Green peas pesto is a healthy and delicious sauce that can be prepared very easily. I found this recipe in Aldi's website.

This was the first time I tried pesto, and my family really liked it. I served it as chutney with the savoury cake and it was really delicious.

Preparation Time: 15 minutes
Makes: 6 servings

1 cup green peas, half cooked
1/2 cup red onion chopped
2 tsp lemon juice
1 garlic clove
1 tsp ground black pepper
Curry leaves
1-inch ginger piece
1/4 cup extra virgin olive oil
2 tbsp grated coconut
1 green chili
Salt to taste

Combine the half cooked peas, onion, garlic, ginger, green chili, curry leaves, coconut, lemon juice, black pepper and salt in a grinder. Crush the mixture in a grinder.

Combine peas, ginger, garlic, curry leaves, black pepper, chilli,salt

Add the olive oil little by little while grinding. Make into a coarse paste.

Transfer to a bowl. Serve with bread or top a crostini with this delicious pesto.

You can make the pesto 3 days in advance and refrigerate in an air-tight container.
