A simple recipe for chewy green tea cookies with white chocolate chips.
Preparation Time: 10 minutes
Cooking Time: 6-8 minutes
Makes: Approx 20 biscuits
Ingredients
100g unsalted butter
1 egg
1 and 1/4 cups cake flour
1 pinch of salt
1 pinch of baking powder
1/4 cup castor sugar
1/2 cup brown sugar
1 tablespoon matcha green tea powder
1/2 cup of white chocolate chips
Method
Preheat oven to 180 degrees.
Melt or soften the butter.
To this, add the egg, flour, salt, baking powder, sugar, green tea powder and white chocolate chips.
Dollop this mixture onto two baking trays lined with greaseproof paper.
Bake for 6-8 minutes until edges are just starting to turn golden.
This recipe makes a sweet biscuit with a subtle green tea flavour. If you'd like a stronger flavour, reduce the sugar and increase the matcha powder quantities.
