Green Vegetable Omelette With Parsley Toasted Pine Nuts

This delicious omelette is crammed full of green anti oxidant vegetables. The addition of seeds and pine nuts pack an energy punch, giving lift to the beginning of the day.

Preparation Time: 15 minutes
Cooking Time: 20 minutes
Makes: 2 servings

Ingredients
1/2 green pepper
4 spring onions
3 eggs
1 tbsp vegetable oil
2 large handfuls of fresh spinach, washed
1 handful fresh parsley
2 tbsps mixed seeds such as Omega 3 mix
2 tbsps pine nuts



Method
  • Chop the green pepper and the onions.
  • Fry the pepper and onions in the vegetable oil for about 8 minutes or until the pepper begins to soften slightly.
  • Add the spinach to the pan and stir until it wilts into the other vegetables.
  • Crack the eggs into a bowl and whisk with a fork.
  • Setting aside two or three leaves for decoration, chop the parsley and add it to the egg mix, along with the seeds.
  • Pour the egg mix into the frying pan and fry until omelette is cooked through (about 8 minutes).
  • Meanwhile toast the pine nuts by warming a heavy based frying pan on the heat and adding the nuts, keep agitating the pan until they begin to colour.
  • Remove the omelette from the pan, turn over into half and cut in two.
  • Scatter the toasted pine nuts and add the parsley leaves to serve.
