Greens and Garlic Prawn StirFry

Need a yummy dinner in twenty minutes? Here’s a stir-fry that’s super quick and super easy. Substitute prawns with chicken or replace broccolini with cauliflower if you prefer.

Preparation Time: 8 minutes
Cooking Time: 12 minutes
Makes: 4 servings

Ingredients
Peanut oil
500g uncooked green prawn meat, washed and drained
2 garlic cloves, crushed
1 cup cherry tomatoes, halved
1 bunch bok choy
1 bunch of broccolini
¼ cup oyster sauce
1 tablespoon garlic soy sauce
2 tablespoons sweet chilli sauce
1 tablespoon sesame seeds
1 pack Singapore style noodles

Method
  • Prepare noodles according to packet instructions.
  • Meanwhile, cut broccolini and bok choy into 3cm lengths.
  • Heat large frying pan or wok over high heat.
  • Add oil, swirling to coat surface of pan.
  • Add garlic; stir for 2 minutes or until fragrant.
  • Add prawns; stir-fry for 2 minutes or until prawns curl and become pink. Transfer to plate.

  • Removing prawns ensures they do not overcook.


  • Add bok choy and broccolini; stir-fry until just wilted or until they are to your liking.
  • Add cherry tomatoes; stir-fry until just collapsed.
  • Drain noodles; add to frying pan.


  • Stir through sauces and sesame seeds; stir-fry for 2 minutes or until heated through.


  • Serve immediately.
