Griddled and Steamed Seasonal Vegetables

Eating seasonally is better for your body, and there are few better ways than to enjoy beetroot, cabbage and peas, than by cooking them simply, and quickly, without compromising on flavour.



Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: 2 servings

Ingredients
1 Beetroot Bulb
Half Spring Cabbage
1 Smoked Garlic Clove
50g Fresh Garden Peas

Method

  • Chop the 'top' and 'tail' ends off the beetroot.



  • Scrub the skin, rinse, and slice into medium-thick 'chip' sizes.



  • Slice the cabbage.



  • Add the beetroot and peas to a saucepan of boiling water.

  • Place the cabbage in a sieve on top of the saucepan of beetroot and peas, and cover for 10 minutes.



  • Slice the garlic and set aside.

  • Remove the beetroot from the saucepan and place on a hot griddle pan with a splash of oil with the chopped garlic.



  • Cook for 10 minutes.

  • Drain the peas, remove the cabbage from the sieve, and take the griddle pan off the heat.

  • Serve the vegetables on seperate plates so people can serve themselves.

    Enjoy these seasonal vegetables in the garden with roasted meats, or baked fish for a summery lunch/dinner.
