Griddled chicken reminds me of Nandos, but at less than half the price, and minus the rice or chips, you save calories and money.

Makes: 2 servings
Ingredients
2 chicken leg quarters
1 tsp thyme
1 tsp basil
1 tbsp garlic butter
1 tbsp olive oil
1 red pepper
1 summer cabbage
1 courgette
Half a tsp of black pepper
Method
Place the griddle pan on the stove and turn the heat up high. Add the chicken along with a tablespoon of olive oil and garlic butter. Turn down the heat to medium.
Add the basil and thyme to the griddle, and allow the chicken to 'brown' lightly for at least 20 minutes, 10 minutes on each side.
Wash and slice the vegetables to a thickness of your liking.
Cook the chicken for a further 10 minutes, then add the courgettes and peppers, but keep the cabbage aside. Cook on a medium heat for 10 minutes.
Ensure the chicken is cooked all the way through, and the vegetables do not burn by keeping the heat no higher than medium, and moving it around the pan.
Add the cabbage for the last 5 minutes of cooking - it adds a bit of crunch.
