Grilled Lamb, Brussel Sprouts & Feta Pizza

Winter is truly here and I think grilled lamb is the perfect winter night dish. With Masterchef on in the background, I decided to get creative and combine the rustic flavour of lamb with healthy brussel sprouts.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 2 servings

3 fresh lamb cutlets
1 herb & garlic pizza bread
30g fresh brussel sprouts
20g Danish feta cheese
30g cherry tomato
30g shaved cheese
2.5 tablespoon tomato paste
1 tablespoon extra virgin olive oil
20ml red wine
Salt and pepper to season

Preheat the oven to 180C.
Marinate the lamb cutlets in red wine for 15 minutes. Season with salt and pepper. (If time allows, marinate the lamb cutlets longer or overnight in the fridge)
Heat the grill pan and drizzle lightly with some olive oil.
Place the lamb cutlets and the brussel sprouts on the grill pan and cook for 3-5 minutes.

Allow the lamb to rest for 10 minutes before de-bone and carve into halves.

In the mean time, liberally spread tomato paste evenly on the pizza base.

Top with shaved cheese and let it melt in the oven.
This is a perfect margarita pizza already :)

Top the pizza with tender pink lamb slices.

Cut the tomato in quarters and arrange them on the pizza.

Scatter the Brussels Sprouts all over the pizza.
Further bake in the oven for another 5 minutes.

Remove from oven and garnish with crumble feta.
Season with salt and pepper.

Slice the pizza in equal parts and serve immediately.

We are seriously drooling looking at this meal and it tastes as fantastic as it looks. The flavours work well together. Put up your feed and enjoy this pizza with a nice of glass of wine.
