Grilled Mackerel and Greens

Mackerel is one of the cheapest types of fish available in the UK. Rich in heart-healthy oils, it is generally forgotten in favour of more exotic white meats, but all mackerel needs is a little seasoning and a little love.



Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 2 servings

Ingredients
Handful of spinach
2 mackerel fillets
1 broccoli head
3 dried thyme sprigs
3 dried rosemary sprigs
Half tsp black pepper
Tblsp lemon juice
Tbslp balsamic vinegar
Tbslp olive oil
2 garlic cloves

Method
Finely slice the garlic cloves.



Wash the fillets with lemon juice then season with the herbs, pepper and garlic.



Place under the grill for 20 minutes, turn the heat to medium. After 15 minutes check the fish and rotate.



Place the broccoli in a sieve on top of a saucepan of boiling water.



Cover with a lid and simmer for 10 minutes. Remove the lid and serve on a plate



Wash the spinach.



Season with the pepper, vinegar, oil and lemon juice.



*Plate up and enjoy with the fish and broccoli.



Plate up the mackerel, broccoli and spinach.
