Ingredients A dozen cup mushrooms (use fewer if using larger field mushrooms)
75 gm blue cheese
Place mushrooms on a baking tray lined with baking paper.
Carefully stuff each mushroom with the blue cheese. To make thi easier you may wish to take out the stalks of the mushrooms, however I leave them in and stuff smaller pieces of cheese around the stalks.
Carefully push a sprig of fresh thyme into the top of each mushroom.
Grill on a medium heat for about 5 minutes or until the cheese is melted and the mushrooms begin to soften.
Serve with anything! These make a great addition to breakfast egg dishes or as a side to grilled chicken.
This can work with almost any cheese such as cheddar or feta. When using other cheeses I also add a couple of drops of Worchestershire Sauce to the mushrooms before stuffing them with the cheese.
