Grilled Pumpkin Chicken Teriyaki

You will be surprised at how simple and easy this recipe is, that makes a delicious meal of juicy succulent chicken teriyaki with the combination of sweet pumpkin.



Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 4 servings

Ingredients
4 chicken thigh fillets, washed
Half pumpkin, cut into 2cm thick slices
1 cup teriyaki marinade
Steamed jasmine rice, to serve
Roasted sesame seeds, to serve

Method
  • Preheat the oven to 200C fan-grill. Marinate the chicken with the teriyaki marinade for 15 minutes.

  • Place the pumpkin slices on a roasting pan. Add the marinated chicken together with the excess marinade on top of the pumpkin.



  • Grill in the oven for 30 minutes until the chicken has browned and cooked through.

  • Serve with steamed jasmine rice, drizzle with the teriyaki sauce and sprinkle roasted sesame seeds on top.
