This is #9 in my brunch/breakfast recipes, and this was very tasty, though not hot (spicy) as I intended it to be. I bought a jalapeno thinking this was hotter than a chilli however it was definitely not.
Easy to make, this is great when you have time to sit, relax, eat and take your time, though it is rather messy to eat!
Ingredients 1 ripe avocado
½ small shallot
1 small garlic clove, chopped
½ small jalapeno, chopped very finely
1 tbsp coriander leaves, finely chopped
½ tbsp fresh lime juice
Bit of salt
½ roma tomato, chopped
1 egg (optional)
For the grilled cheese 2 slices bread
2 slices cheese
Cut the avocado in half, scoop out the flesh, and mash it.
Add the onion, garlic, jalapeno, coriander, lime juice and some salt and pepper.
Stir until it is well combined.
Add the chopped tomato and stir again.
Heat a pan on a medium heat.
Spread the guacamole thickly on one side of the bread, and thinly on the other.
Top each one with a slice of cheese.
Close the sandwich and butter one side.
Put the buttered side down in the pan and cook for about 5 minutes.
While this is cooking, butter the side that is up.
Turn the sandwich carefully round and cook the other side for another 5 minutes or so.
Meanwhile also fry the egg, if using.
Cut the toast in half carefully and add the egg to the top.
