Halloumi and Avocado Salad
Although this is a salad, it is quite filling and I had it as a main meal the second night.

The crisp taste of the salty halloumi is great with the texture of the avocado, and it is, of course, vegetarian.
Preparation Time: 10 minutes
Cooking Time: 8 minutes
Makes: 2 servings
Ingredients
200 g halloumi
1 tbsp flour, seasoned with pepper
1 tbsp olive oil
100 g mixed lettuce leaves
1 avocado, sliced
Fresh rocket
For the dressing
1½ tbsp lemon juice
4 tbsp olive oil
1 tbsp mint, chopped
Black pepper, to taste
Method
Get the dressing ready first by mixing all the dressing ingredients.
Coat the halloumi lightly with the flour.
Heat oil in a frying pan and fry the cheese for about 3 - 4 minutes on each side or until it gets a golden crust.
Put the lettuce leaves in a large bowl and add half of the dressing.
Add the avocado (I usually sprinkle lemon juice on avocado before using it to stop them going brown), and toss gently.
Put the hot cheese on top and pour the remaining dressing over this.
Add the rocket leaves and serve.
If using it for two meals, do not use all the salad leaves as the dressing will make them go soggy the next day. Wrap half of the avocado with cling wrap and keep in the fridge.
