Halloumi and Avocado Salad
If you're looking for a filling and nutritious salad which is easy to make, this is for you. I first discovered this salad at a great restaurant called The Natural Kitchen in London and soon after made my own version of it using all my favourite ingredients. I usually make a huge batch for dinner and take some for work the next day.

Cooking Time: 15 minutes
Makes: 2-3 Servings
Ingredients
One pack of Halloumi Cheese
One Floret of Broccoli
One Avocado
A handful of cherry tomatoes
One bag of mixed salad leaves
3/4 cup of Brown Rice
Pinch of salt
Olive Oil
Seeds of your choice
Method
Wash the rice and boil it as per the instructions on the packet. Season slightly with a pinch of salt.
Wash and chop and the broccoli and put it in a pan ready to boil in the last 5 minutes of cooking.
Then wash and chop all the remaining salad ingredients keeping the avocado separate. Place the salad leaves in a large bowl.
Heat up a tea spoon of olive oil in a frying pan. Then slice the halloumi and place in the frying pan. Once the halloumi starts to brown add the tomatoes and seeds for just a couple of minutes. Or you can keep the tomatoes and seeds raw depending on your preference.
In a separate pot add boiling water to the broccoli and begin to boil.
Toss the contents of the pan into bowl of salad. Once the broccoli is cooked, add that to the bowl.
Divide the rice between the 2-3 plates (or your lunch box)!
Stir the contents of the salad bowl and add to the plates before placing the avocado on top.
