Halloumi Radish Salad

I made this salad using a recipe card from the supermarket, with just a few small tweaks. There's lots of healthy veg with a bit of halloumi cheese as reward for good behaviour.

Preparation Time: 10 minutes
Cooking Time: 5 minutes
Serves: 2

Ingredients
80g asparagus tips
80g green beans
80g radishes
5 cherry tomatoes
1/2 cucumber
50g watercress
80g halloumi
1 tbsp avocado oil
1 tbsp lemon juice


Method
  • Steam the asparagus and green beans for about three minutes or until soft, and then place in a bowl with watercress.
  • Slice the radishes and tomatoes, and then add to the bowl.
  • Cut the cucumber vertically, and scoop out the seeds. Slice the cucumber into crescent shapes and then add to the bowl.

  • Slice the halloumi into cubes and then fry on either side for about two minutes or until the halloumi has turned golden.

  • Add to the bowl along with the avocado oil and lemon juice, then mix everything together.
