Haloumi Mushrooms Skewers with Cabbage Pineapple Stir Fry

Haloumi - that chewy, salty, tasty cheese that you can bake, grill, or add to stir fries! It gives a lot of taste to dishes and in this recipe I have threaded it onto skewers with mushrooms and Prosciutto.

I have then made a stir fry with honeyed cabbage and pineapple.

Preparation Time: 30 minutes plus standing time
Cooking Time: 25 minutes
Serves: 3

For the skewers
4 skewers
100 g haloumi cheese
8 slices prosciutto, halved lengthwise
6 mushrooms, small button
1½ tbsp olive oil
1 tbsp balsamic vinegar
½ tbsp lemon juice
1 tsp sugar
½ tbsp grainy mustard
½ tbsp rosemary, fresh if possible, chopped
For the cabbage
½ sweet potato
½ medium onion
¼ small cabbage, shredded
125 g bean sprouts
½ medium red capsicum, sliced
220 g can unsweetened pineapple pieces, drained
½ tbsp hoisin sauce
½ tbsp soy sauce
½ tbsp honey

For the skewers
  • Soak the wooden skewers in water so that they are damp (this should stop them burning).

  • Cut the haloumi in half and then cut each half into smaller pieces.

  • Put them through the skewers and carefully push down to the bottom part.

  • Add the haloumi, mushrooms and prosciutto in alternating layers, and put in a dish or plate.
  • Next time I make this, I would use less sticks and put more on each, and I have put 4 stick in the ingredients

  • Mix the olive oil, vinegar, lemon juice, sugar, mustard, rosemary and some pepper in a jar with a lid (salt is optional).

  • Shake well.

  • Pour half this mixture over the skewers, and turn the skewers to coat everything in this mixture. Put in the fridge for about 30 minutes, or you could even do this overnight if you cover it.

  • Put the skewers under a grill and grill until they are browned all over - you could also do this on the barbecue.

  • Serve them drizzled with the remaining oil mixture.

  • You can either serve them as they are on the stick, or you can take them off the stick carefully, with a fork.

  • For the cabbage
  • Cut the sweet potato into small sticks, and boil, or steam them until almost tender.

  • Heat a bit of oil in a wok and add the onion. Stir for about 2 minutes or until the onion is soft.

  • Add the shredded cabbage, bean sprouts, and the red capsicum to the pan and stir for about 2 more minutes.
  • Cabbage should be shredded or cut

  • Stir in the drained pineapple with the rest of the sauces, the sweet potato, and the honey.

  • Stir for another minute or two, and serve.

  • I served this with the haloumi and mushroom skewers, however you could eat this stir fry with just about any other meal.
  • I also had some apple sauce with the meal the next day
