Ham Tomato Bread Pudding

A bread pudding is an excellent way of using up stale bread, and although it is most commonly associated with a sweet bread and butter pudding, you can make savoury dishes as well. This is a recipe using ham and tomato, but you can use any meat of vegetables you want.

Preparation Time: 25 minutes
Cooking Time: 20 minutes
Makes: 6 servings

Ingredients
4 thick slices or 8 medium slices of bread
100g sliced ham
3 tomatoes
120g spinach
300ml almond milk
4 eggs
1 tbsp ground basil
1 tsp paprika
1 tbsp grated grana pandano cheese

Method
  • Pre-heat oven to 200 & #3872 ;C/ 180 & #3872 ;C fan/375 & #3872 ;F/5 Gas.
  • Slice the bread into triangles, and line in a roasting dish.



  • Layer the ham on top.



  • Slice the tomatoes, and layer on top.



  • Layer half the spinach.



  • Beat the milk, eggs, ¾ tbsp basil, and ½ paprika together.
  • Pour the mixture over the bread pudding.



  • Layer the rest of the spinach on top.
  • Sprinkle over the cheese and remaining basil and paprika.



  • Bake in the oven.
