A bread pudding is an excellent way of using up stale bread, and although it is most commonly associated with a sweet bread and butter pudding, you can make savoury dishes as well. This is a recipe using ham and tomato, but you can use any meat of vegetables you want.

Cooking Time: 20 minutes
Makes: 6 servings
Ingredients
4 thick slices or 8 medium slices of bread
100g sliced ham
3 tomatoes
120g spinach
300ml almond milk
4 eggs
1 tbsp ground basil
1 tsp paprika
1 tbsp grated grana pandano cheese
Method
Pre-heat oven to 200 ༠C/ 180 ༠C fan/375 ༠F/5 Gas.
Slice the bread into triangles, and line in a roasting dish.
Slice the tomatoes, and layer on top.
Beat the milk, eggs, ¾ tbsp basil, and ½ paprika together.
Pour the mixture over the bread pudding.
Layer the rest of the spinach on top.
Sprinkle over the cheese and remaining basil and paprika.
