HappyMans Seafood Paella
A lovely and irresistible Spanish food that I am always tempted to eat a lot of them. The flavour is often so wonderful when customizing ingredients to suit our personal taste at home. In this version, both seafood and rice can absorb the essence of sauce, though they may not be arranged beautifully on pan.

Cooking Time: 15-20 minutes
Makes: 3-4 servings
Ingredients
1 1/2 cup arborio rice
1 dozen mussels, cleaned
100g raw squid rings
100g raw peeled prawns
200g mixed cherry tomatoes, havled
1/2 cup peas, defrosted
2 garlic cloves, peeled and crushed
1 brown onion, peeled and diced
4 tbsp homemade tomato sauce
1 tsp sweet paprika
1 tbsp fresh parsley, chopped
1 tbsp olive oil
2-3 cups homemade fish broth
Method
Heat 1 tbsp olive oil on a large saucepan/paella pan over medium heat, add in onion and garlic.
Just before they change to brown, add in tomatoes, 1 tsp sweet paprika, 4 tbsp tomato sauce and 1 cup broth, mix well to combine, bring to boil.
Add in 1 1/2 cup rice, stir to combine, make sure the rice is evenly distributed.
Cover and turn to low heat, simmer for 5 minutes.
Open lid, add in 1 cup broth, lay mussels and peas on pans.
Cover, cook for 5 minutes or until mussels are opened.
Open lid, add in prawns, squid and parsley, stir gently, occasionally add in broth a bit at a time.
Let seafood just cook through and sauce just be absorbed by rice and seafood.
Remove unopened mussels.
Serve as it is or divide between serving plates.
