My fridge was full and I needed to make space, so I had 2 eggs left in one pack of eggs so I boiled them.
Then I didn't know what to do with them for brunch, so I did the following.
I used a hot sauce on top however you could also use maple syrup if you like a sweet touch. The hot sauce gave it a nice "kick".

Serves: 1 - 2
Ingredients
1 Brioche roll or English muffin
2 hard boiled eggs
½ tomato
½ avocado
Cream cheese, to spread
Cheese - any sort, to melt on top
Hot sauce (optional)
Method
Slice the Brioche or whatever roll you are using, in half.
Spread some cream cheese on each side of the roll.
Lay the sliced eggs on top of this.
Add the tomatoes - I always use Roma tomatoes.
Top with the cheese - it can be grated, or not, and a few splashes of the hot sauce.
Put under the grill for about 4 or 5 minutes or until the cheese is melted.
Eat with a nice hot tea or coffee!
