Hazelnut and Cream Roll

Makes: 6-8 servings
Ingredients
6 eggs, separated
1/2 cup caster sugar
1 1/4 cup hazelnut meal
600ml cream, whipped
3 chocolate cake bars
3 teaspoons cherry marmalade
2 squares of milk chocolate, grated
Method
Beat 6 egg yolks with 1/2 cup of sugar until light color
Beat egg 6 whites until firm peaks form
Carefully mix egg whites with egg yolk mixture, then slowly add 3/4 cup of hazelnut meal
Grease rectangular silicone mat
Spread mixture on silicone matt
Bake on 170 degrees Celsius in fan forced oven, for 22-25 minutes
Allow to cool
Whip cream with electric beater, add 1/2 cup of hazelnut meal
Spread 1/2 of whipped cream on the cooled cake
Cut cakebars in half, spread 1/2 of each bar with marmalade and little cream. Place other half of cakebar on top.
Place chocolate bars towards one side of the cake
Roll the cake over the chocolate bars using the silicone matt for easy handling
Place roll on a large plate. Cover it with the rest of the whipped cream
Sprinkle with grated chocolate
Cut roll into slices and serve.
