Healthier Bread and Butter Pudding
Bread and butter pudding is an old family favourite of mine, perfect for using those slightly stale, not-good-enough-for-sandwiches-but-too-good-to-throw-out slices of bread. This recipe is healthier than most (using no cream) but tastes just as delicious!
Preparation Time: 25 minutes
Cooking Time: 50 mins
Makes: 6 servings
Ingredients
6 slices white bread
30g butter
1/2 cup sultanas
1/4 cup castor sugar
1 tsp vanilla essence
3 eggs
2 1/2 cups milk
nutmeg and cinnamon to sprinkle (freshly grated or ground is best)
Method
Preheat oven to 140 degrees.
Cut crusts off bread.
Butter one side of each slice then cut slices into four small triangles.
Arrange triangles (butter side up) into two rows along the bottom of a medium sized oven proof dish. Add another single row going in the opposite direction along the middle of the two bottom rows.
Sprinkle bread with sultanas.
Whisk eggs, milk, vanilla and sugar in a large jug until combined.
Pour half the egg mix over the bread then stand for 10mins.
Pour remaining egg mix over soaked bread and sprinkle evenly with nutmeg and cinnamon.
Place dish in a tray filled to half-way with boiling water.
Place pudding in oven and bake for 50 mins or until custard is set.
Serve warm or cold. Great with tinned fruit and cream on top. Yum!
