Healthier Stacked Pancakes
Stacked pancakes, healthier than the average, and with jam and yogurt. Better than sugar and cream any day.
Preparation Time: 2 minutes
Cooking Time: 5 minutes
Makes: 8 servings
Ingredients:
1 cup of organic spelt flour
1 cup of almond milk
1 organic free range egg
1 tblsp sunwarrior protein powder (chocolate)
1/2 a banana
1tsp organic cold pressed vanilla extract
1 tsp brown sugar
2 sticks of chopped rhubarb chopped
Method
Add all ingredients to a blender/ food processor
Once blitzed together one ladel makes one pancaked.
Fry in coconut oil and start stacking!
Once you stacked 5 serve with home made (I make my own, but organically bought is fine), blueberry jam and a dollop of Greek yogurt.
Serve for an indulgent breakfast/dessert/afternoon snack! Who said pancakes were just for breakfast?
