Healthy Apple Banana Oat Muffins
These healthy apple, banana and oat muffins are the perfect breakfast muffin. They are fillling, have fruit and vegetables and taste amazing.

Cooking Time: 40 minutes
Makes: 18 muffins
Ingredients
2 cups oats (or flour if preferred)
1/2 cup hazelnut meal
2 teaspoons baking powder
1/4 teaspoon baking soda
1 1/2 teaspoons cinnamon
1/4 cup honey
2 tablespoons chia seeds
1/4 almond milk
2 eggs
1 egg white
4 tablespoons coconut oil
1 teaspoon vanilla essence
1 apple
1 carrot
2 ripe bananas
Method
Blend the oats until you have a flour like consistency.
In a large mixing bowl, combine ground oats, hazelnut meal, chia seeds, baking powder and baking soda.
In a separate small bowl, lightly beat eggs, egg white and milk.
In a small pot, mix the coconut oil, cinnamon, vanilla and honey over low heat until it becomes syrupy.
Remove from heat and combine with egg mixture.
Add wet mixture to dry mixture and combine.
Grate the apple and the carrot and mash the bananas.
Gently fold the fruit and carrot into the muffin mix.
Heat the oven to 180° and line or lightly grease a muffin tray.
Bake for 40 minutes or until a toothpick is inserted in the muffin comes out clean.
Allow the muffins to cool and sprinkle with cinnamon before serving.
