Healthy Asian Chicken Lettuce Cups
Quick, fresh, zesty and on the table in 15 minutes! These healthy lettuce cups are a family favourite as the fresh herbs and lemon make a delicious combination and you don’t need cutlery.
They are gluten free and low FODMAP.

Serves: 4
Ingredients
500 g chicken mince
1 tbsp oil
2 birdseye chilli, finely cut (exclude for family friendly option)
1 clove garlic, finely cut (exclude for low FODMAP)
2 tbsp raw sugar
1 tbsp rice vinegar
2 tbsp fish sauce
1 lemon, zested and juiced
1/4 cup basil, finely cut
1/4 cup coriander, finely cut
2 tbsp mint, finely cut
Baby cos or iceberg lettuce leaves
Jasmine rice, to serve
Method
Preheat a frypan on high. When hot, add oil, garlic and chilli and stir fry until fragrant.
Add the chicken mince, stir fry and break the mince into small pieces until just white.
Add the lemon zest and stir to combine.

Add the lemon juice, sugar, fish sauce, rice wine vinegar and stir fry until evenly coated.
Add the herbs, turn off the heat and stir until the herbs wilt.

Spoon the chicken into lettuce leaves.
Serve with jasmine rice.
