Healthy Avocado Cookies

These cookies have no sugar but plenty of protein and healthy fats. They could be easily carried around in your bag for a quick healthy snack on the go.

Preparation Time: 20 minutes
Cooking Time: 15 minutes
Serves: 20-25

Ingredients
1 large avocado, peeled, pitted and mashed
1 large egg
2/3 cup peanut butter
3 tablespoons raw honey
¾ cup rolled oats
1 teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon baking powder
1 tablespoon chia seeds
½ cup walnuts, chopped
2 tablespoons pumpkin seeds

Method
  • Preheat the oven to 180°C and line the baking sheet with a parchment paper.
  • In a large bowl, combine avocado, egg, peanut butter and honey.

  • Then, add the oats, cinnamon, nutmeg, baking powder, chia seeds, walnuts and pumpkin seeds. Mix the ingredients until well combined.

  • Using a tablespoon measurement, drop the cookie dough onto prepared baking sheet and flatten slightly.

  • Bake the cookies for about 15 minutes.

  • The cookies could be stored for up to one week if you keep them in an airtight container inside the refrigerator.
