Healthy Banana Bread
This banana bread is so delicious and sweet. All of its sweetness comes from the bananas, however, if you have a major sweet tooth, feel free to add a bit of your sweetener of choice. It's a baby-friendly recipe; my toddler loves it! It's based on

Preparation Time: 10 minutes
Cooking Time: 50 minutes
Makes: 1 loaf
Ingredients
4 bananas
5 medium-sized eggs, lightly whisked
1/2 cup coconut flour
1 tsp cinnamon powder
1/2 tsp bicarb soda
1 tsp baking powder
Method
Preheat your oven to 190°C and line a bread tin with baking paper.
Peel and roughly chop the bananas. Place them in a large bowl and mash them with a fork.
Add the eggs (I'm lazy, so I crack them directly into the bowl) and stir them through with the fork. It's fine if the mixture is a bit lumpy.
Add the coconut flour, cinnamon, bicarb soda and baking powder and mix thoroughly.
Leave to stand for 5 minutes, then pour the mixture into your bread tin.
Place in the oven for 50 minutes, or until the surface is golden-brown and an inserted knife comes out clean.
Leave to cool. The bread, which will probably have risen nicely, will shrink a bit.
