Healthy Broccoli and Chicken Fettuccine

A healthy spin to this classic favourite, this dish is quick and easy to prepare. It can be made ahead and enjoyed for lunch or dinner.

Preparation Time: 10 minutes
Cooking Time: 12 minutes
Makes: 4 servings

500g fettuccine
200g cooked chicken breast (roughly 1 chicken breast)
1 head of broccoli
1/2 cup low fat cream
1 cup grated cheese

Boil water in a large pot. Once water is boiling, place fettuccine in the pot. Reduce heat to a simmer and cover with a lid. Cook pasta for 12 minutes or according to packet directions if your brand of pasta differs.


While pasta is cooking, chop up broccoli into florets. Steam these or throw in with pasta for the last 5 minutes of cooking if this is your preference.


Cut chicken into small strips.

When pasta is cooked, remove from the heat and drain water. Next place cream into pot or large bowl with pasta and mix to combine.

Place broccoli and chicken pieces in with pasta and mix.


Serve with a sprinkling of grated cheese on top.
