Healthy Bubble and Squeak

This healthy bubble and squeak recipe is easy and simple to make. This is a clean verision with no butter, no cheese, minimum oil but a whole lot of flavour! Best of all you can add any veggies you like to the potato base. Carrots, corn, different herbs, the choice is yours!



Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 10 servings

Ingredients
6 medium potatoes
1/2 zucchini
1/2 cup of peas
1 handful of parsley
Salt and pepper to taste
1 tbsp. of oil
1 spring onion

optional additions
1 can of tuna
1 handful of parmesan cheese
1 carrot
1/2 cup of corn

Method
  • Peal and chop the potatoes, put them on to boil.
  • Whislt the potatoes are cooking prepare the rest of you ingredients. Grate the zucchini, snip the spring onion and chop the parsley. Once the potatoes are cooked, drain them and allow to cool.
  • Once the potatoes are cool, mash them and add the other vegetables into a bowl. Season well and stir to combine.

  • Form the mix into patty shapes. Heat a small amount of oil in a large pan.

  • Cook the patties for about 4 minutes on each side until golden.

  • Serve with a salad, in a bun or eat on their own!
