Healthy Chow Mein
For me, Chow Mein would have to be one of those meals that feels like home. Mum would cook up a batch and leave extra curry powder and butter on the table. So hence it was slathered in butter and absolutely moreish!
Now that I am older and wise, a healthy version is definitely something that I need in my life, and here it is. Tastes just as amazing!
Preparation Time: 5 minutes
Cooking Time: 38 minutes
Serves: 4-6
Ingredients
500 g mince
1 stick celery, sliced
1/4 green cabbage, shredded
2 carrots, sliced into sticks
1 onion, sliced
2 cloves garlic, crushed
100 g green beans, sliced
2 cups bean sprouts (optional)
3 tsp curry powder (or to taste)
1 tbsp tamari
2 cups chicken stock
Salt & pepper
Cooked brown rice to serve
Method
In a large, deep pan brown the mince in a little olive oil.
Add onion, garlic, carrot, and celery and cook for 2 minutes.
Add curry powder and cook for another minute.
Add all remaining ingredients and simmer for 30-40 minutes.
Serve with brown rice
