Healthy Fried Rice with Chicken
Delicious and easy to make, this fried rice makes an ideal lunch or dinner whether it's warm or cold outside. Packed with lots of vegies and nuts it's not only super tasty, but also very healthy.

Makes: 4 servings
Ingredients
Olive oil
2 cloves garlic, crushed
4 tablespoons of soy sauce
500g chicken thigh fillets, cut into bitesize pieces
2 teaspoons sesame oil
1/2 Chinese cabbage, shredded
1 carrot, thinly sliced
1 small red capsicum, sliced
3 cups cooked long grain rice
1/2 cup cashew nuts
6 spring onions, thinly sliced
Method
Combine 3 tablespoons of olive oil, garlic and 2 tablespoons of soy sauce. Mix well.
Coat chicken with marinade and set aside for 30 minutes or overnight if you prefer.
Heat oil in a large frying pan on medium heat.
Cook chicken pieces until slightly brown.
Add rice and cook for a further 2 minutes.
Add cabbage, carrot and capsicum and stir fry for 2 minutes.
Add soy sauce, cashews and half the spring onions.
Toss to combine
To serve, garnish with remaining spring onions and drizzle with little extra soy sauce.
