Frozen fruit is fantastic for smoothies, providing a thicker consistency and making them extra cold - perfect for those hot summer days! This recipe uses mango but frozen berries and banana also work wonderfully, just remember to peel or or remove the seeds of the fruit before freezing to make preparation and thawing easier.
This recipe is also healthy, using low fat yoghurt instead of ice-cream, and skim milk instead of full cream. So don't worry about feeling guilty and enjoy this fantasticaly healthy, easy and tasty treat!

Makes: 1 large or 2 small servings (approx. 500mL)
Ingredients The cheeks of a frozen mango
100g low fat mango or vanilla yoghurt
1 cup skim milk
Partially thaw frozen yoghurt in tap water for 5 mins, or until mango can be broken into firm chunks with a spoon.
Place mango, yoghurt and milk into a blender (I use a stick blender but a normal blender or magic bullet would work just as well).
Blend until smooth (approx. 2 mins). If using a stick blender lift the blender up and down whilst blending to incorporate air and give a thicker consistency.
Pour smoothie into a large glass (or two small glasses), top with a straw and enjoy!
