This lasagne uses no cream, light cheese and lean mince, making it healthier than your average lasagne yet just as delicious. Great served on it's own or with a side salad.

Makes: 8 servings
Ingredients
Bolognese Sauce:
1 large brown onion, diced
3 cloves garlic, crushed
1 kg lean mince
2 x cans chopped tomatoes
1 tsp oregano
Salt & pepper, to taste
White Sauce:
2 cups light milk
5 tbsp corn flour
1/3 cup light cheese
1/4 tsp nutmeg
Salt & pepper, to taste
Other:
1 large packet lasagne sheets
Light cheese for topping
Method
Fry onion and garlic in large fry-pan over medium heat. Add mince and cook until brown.
Add tomatoes and oregano. Simmer until most of the liquid has evaporated. Season to taste.
To make the white sauce, heat milk to almost boiling in a microwave or over a stove top.
Add a small amount of cold water to the corn flour, mixing to ensure no lumps. Add to milk, stirring continuously.
Heat milk again until boiling and thickened (stir while heating if using a stove top). Stir through cheese, add nutmeg and season to taste. If sauce is too thick add more milk, if too thin add more cornflour.
Preheat oven to 180 degrees.
To assemble lasagne spread a small amount of bolognese over the bottom of a large oven proof dish (this stops lasagne sticking to the dish when cooked). Then layer lasagne sheets, bolognese and white sauce.

Repeat layering process.
To finish the layering process, place a layer of white sauce over the last layer of lasagne sheets then top with cheese.
Bake for 35 mins or until golden. Cut, serve and enjoy.
