Healthy Low-Carb Breakfast

You can't beat a full English fry-up, but with summer approaching, and the classic English brekky being a little heavy on the grease and fat side of things I've created a low-carb version of the much-loved classic.



Preparation Time: 5 minutes
Cooking Time: 5 minutes
Makes: 2 servings

Ingredients
2 medium sized hens eggs
About 30g of Manchego cheese
3 tomatoes of varied sizes and types
Handful of spinach
Half an avocado
Small bunch of mint
Black pepper

Method
Fry the eggs in a frying pan with a splash of olive oil to your preferred texture (slightly runny is my favourite).



Slice the tomatoes.



Place the tomatoes in the same saucepan as the eggs once the eggs are nearly-done because tomatoes don't need as long. Fry for 2 minutes.

Slice/grate the cheese.



Halve the avocado, and slice a medium sized chunk.



Wash the mint and spinach together, and tear for a fresh addition to your breakfast.



Season the egg and avocado with black pepper to bring out their flavours and tuck in.

I love this breakfast because it doesn't feel that healthy because of the fried egg and cheese, but it's a lighter alternative to the calorie-laden full English breakfast, and, in my opinion, much tastier.
