Healthy Nacho Bowls
Nacho bowls are a great way to enjoy crunchy and satisfying nachos without the high fat content. Using black rice as a base instead of corn chips makes this classic meal more wholesome but just as delicious. This bowl is both meat and dairy free and uses hearty [linkhttp://recipeyum.com.au/any-meal-beans/ homemade beans] and creamy avocado as the perfect replacements.

Ingredients
1 cup of black rice
1 serving of [linkhttp://recipeyum.com.au/any-meal-beans/ homemade beans]
1 avocado
1 lime
2 tomatoes
1 bunch of coriander
1 bag of mixed leaves
Corn chips to garnish

Method
Cook the black rice (or whichever you are using) per packet instructions.
Meanwhile make your [linkhttp://recipeyum.com.au/any-meal-beans/ homemade beans] and leave to simmer. You can use bought beans if you do not have time to make your own. But I encourage you to as you can tailor the spices, heat and salt amounts.
While your rice and beans are cooking prep the vegetables. Dice the tomato, finely chop the coriander, wash and tear the leaves and scoop out the flesh of one avocado into a bowl and mash with juice of one lime, a handful of the coriander and season to taste.
Once the rice and beans are cooked create your bowls.
Layer the black rice on the bottom, cover the rice in the saucy beans and top with the salad and avocado. Garnish with corn chips and dig into your healthy and satisfying meal.
