Healthy Peanut Butter Fudge

I have always loved fudge but when I looked at the classic recipe I couldn't bring myself to make it (as I tend to eat all of it). So I have made a healthier version which turned out better then I could have imagined.

The sprinkle of salt brings out the peanut butter.


Preparation Time: 5 minutes
Cooking Time: 2 hours freezing
Makes: 9 pieces

Wholesome ingredients.


Ingredients
1/2 cup natural peanut butter
1 ripe banana
1 tsp pure vanilla extract
1/4 tsp salt (optional but advised)
2 tbsp coconut oil
2 tbsp maple syrup or honey

Method
  • If in a solid state place the peanut butter and coconut oil in a pot and heat slowly.

  • Unless its hot in the house both will need melting.


  • Once runny enough turn off the heat and mix in the vanilla essence and maple syrup. Stir well.



  • Either add the banana to the pot and stir patiently or place all ingredients in a blender and blend until smooth.

  • Pour mix into a small plastic container OR baking paper lined container.



  • Freeze until firm, will take about 2 hours.

  • Using a hot knife cut the fudge whilst it is till in the container.



  • Sprinkle with salt and serve.

  • NOTE: Due to the liquid nature of coconut oil if it is hot store in the freezer but don't worry it can be eaten straight away!
    Any nut butter can be used - another favourite of mine is walnut butter
