Healthy Peanut Dip with Raw Vegetables
This is a healthy accompaniment and you can use many vegetables to dip into this tasty dip.
I used cauliflower, celery, broccoli and carrots.

Serves: 4 - 6 as accompaniment
Ingredients
1 onion, finely chopped
2 cloves garlic, crushed
½ tsp chilli powder
1 tsp ground cumin
1 tsp ground coriander
4 tbsp crunchy peanut butter
½ cup water
1 tsp shoyu
1 tsp lemon juice
For the crudites
Cauliflower
Broccoli
Celery
Carrots
Method
Heat some oil in a pan and add the onion, and cook till it is softened.
Add the garlic and spices, and cook another minute.
Mix in the peanut butter, then gradually blend in the water, stirring till it is thickened.
Add the shoyu and lemon juice, and leave to cool.
Break the cauliflower and broccoli into small florets, and cut all the other vegetables up into thin pieces.
Put the dip into a dish, place it on a large plate and surround it with the vegetables.
Dip each vegetable into the dip, and this gives a lovely taste to any vegetable!
