Healthy Raw Chocolate Cookie

These are delicious healthy cookies that you can make in no time. These cookies are sweet, fudgy, smooth, slightly tangy from the cranberries and bitter from the dark chocolate.These go really well with a cup of warm tea and are perfect to bring on the go as a sweet snack.


Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 12 bite size cookies

Ingredients
3/4 cup dates, pitted
1/2 cup walnuts
1/2 cup roasted almond, unsalted
1/2 cup dried cranberries
50g dark chocolate (85% cocoa)



Method
  • Place the walnuts and almonds in a food processer and process until grounded.



  • Remove grounded nuts and process dates until sticky.



  • Break chocolate into small pieces.
  • Place all ingredients in the food processor and pulse until well combined.



  • Measure about 1 tablespoon of mixture (I used a small ice cream scoop) and use hands to form small cookies.



  • Place in the fridge to chill before serving or enjoy immediately.
