Healthy Spiced Pumpkin Muffins

I love using vegetables in sweet baked goods. They are healthy, colourful and unique.These healthy spiced pumpkin muffins are healthy and moreish. Perfect for breakfast with some yogurt and honey drizzled over or a quick pick me up in the afternoon.

Fluffy and Delicious Muffins

Preparation Time: 20 minutes
Cooking Time: 30 minutes
Makes: 16 muffins

1.5 cups of wholemeal SR flour
1 tsp baking soda
1 tsp baking powder
2/3 cup of honey, agave, maple syrup OR sugar
1 tsp cinnamon
1 tsp ginger
1 egg
1 cup of cooked mashed pumpkin
2/3 cup apple sauce
1 tsp vanilla essence
2/3 cup of chocolate chips (optional)

Preheat the oven to 180.
Chop and boil pumpkin. Cook the pumpkin with the skin on, its much easier to remove once it is soft, mash the flesh.

Mashed Pumpkin

In a large bowl combine the flour, baking soda, baking powder and spices.

Add the wet ingredients - egg, pumpkin, honey, apple sauce and vanilla.

Fold together, be careful not to over mix the batter.

Smooth Mixture

Spoon mixture into a well greased muffin tray or non stick tray.
Sprinkle with choc chips if desired.

Half with Chocolate Half With out

Bake in the oven for 20-25 mins. Keep checking them and remove from the oven when they start to brown.

Serve warm with butter or Greek yogurt.

Store in an Airtight Container for 4days
