A salad with a spicy twist for the health conscious.
Preparation Time: 10 - 15 minutes
Cooking Time: 10 - 15 minutes preparation and cooking time
Makes: 2 people with rice, great as a salad for one person by itself.
Ingredients
1 tin chickpeas
Half an onion
1 tomato
Coriander or lettuce leaves
½ a lime
Salt and pepper
1 tsp cumin powder
1 tsp of coriander powder
Dash of oil
Method
Chop the leaves, the tomato and the onion. Leave aside.
Heat the oil in a pan and add the chickpeas, coriander powder and cumin powder. Leave on the fire for the spices to cook.
Add half of the chopped tomato.
In the meantime make a salad using the chopped tomato, onion and the leaves.
Mix in a teaspoon of lime juice and season with salt and pepper.
Serve the chickpeas on to a plate. Heap up with the salad.
Eat with rice or on its own.
